I love summer mostly because I love summer food. Hot dogs (don’t judge me), summer corn, pasta salads, oh my. It kind of goes without saying that a 4th of July BBQ isn’t complete without having me there.
So when Wal-Mart gave me a $25 gift card and asked me to come up with a menu starring one of their new USDA Choice steaks as the main entree, I said yes. I love a good challenge and I also love feeding a crowd for less, so I took them up on it. Here’s what I bought (ignore the fact that one two of the cupcakes are missing – I had to see how they tasted LOL): 
Oscar Mayer New York-style uncured hot dogs (no nitrates or preservatives)
Bush’s Grillin’ Beans (my favorite!)
Whole wheat hot dog buns
Amish potato salad
Two-pound USDA Choice rump roast
Lemon drop cupcakes
To round out the menu, I already had some chicken drumsticks and ground turkey for some turkey burgers.
In order to make the meat stretch as far as possible, I decided to make beef kabobs, using the green bell pepper and onion I already had on hand.
I marinaded the beef in McCormick’s Brown Sugar Bourbon marinade (with a dash more brown sugar to help the meat caramelize). It is my favorite marinade for beef, filled with tomato, sugar, garlic, molasses, vinegar and of course, some bourbon for a nice kick.
I cooked it on the grill for about 10 minutes using metal skewers. When I say it was delicious, I’m telling you it will definitely be on my menu from now on. At EVERY BBQ. Perfectly smoky with a little sweetness from the brown sugar and molasses.
Besides being a way to easily stretch out your meat, kabobs are my favorite way to serve food in the summertime, particularly because you can pretty much put anything on skewers and it looks like a totally new meal. I was also thinking of doing some shrimp and lemon skewers, ham and pineapple skewers but thought that might have been doing a bit much considering we didn’t have that many folks over to eat. LOL
