As a kid, my dad used to make us the Jiffy brand apple cinnamon muffins. They had these little bursts of apple cinnamon in the middle (I’ve never known exactly what they were), and they were delicious!
I had a craving for apple cinnamon muffins and didn’t want to go to the store to buy the mix when I knew I had all the ingredients in my cabinet already to make them from scratch. I figured it could be something for my son to snack on during these long summer days. The recipe could easily be doubled, if need be. As written, this recipe makes 12 muffins exactly.
You see eight muffins in the photo. Four got demolished before I paused long enough to take a photo. SMH.
One-Step Apple Cinnamon Muffins
Adapted from this recipe on Social Moms
- 1 1/2 cups all-purpose or cake flour (I used cake flour)
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon (I add two but I prefer a more substantial cinnamon taste)
- 2 large eggs
- 1 cup applesauce (I used unsweetened but you can use either one)
- 1/2 cup milk
Step 1: Dump everything in a bowl and mix, mix, mix.
Step 2: Bake at 375 for 20 minutes.
